The name showing in the Bill To Address in transactions is the "Primary Contact" in the customer record. The primary contact name is added in the Bill To Address when the preference Add Primary Contact to Bill To Address is selected; the preference is found in Setup > Company General Preferences.
Below are the steps to remove the contact name for just one customer.
1. Open the customer record.
2. Under the Relationships tab, Contacts subtab, click the Update Primary button.
3. In the popup box, click the Edit button.
4. Click the dropdown under the Role column and select blank instead of Primary Contact.
5. Click the Save button.
